In the millhouse

Why stone-milled tastes different

Industrial roller mills strip away the germ and bran — the most flavorful, most nutritious parts of the grain. We do the opposite: our stones grind the entire berry at low heat, keeping the natural oils, the wheat germ, and the whole-grain character intact. It’s flour that’s actually alive.
